Still, I always like to find new ways to spruce up my spuds, so when I came across a recipe for roasted potatoes that uses a condiment I already had in my fridge, I was excited to try it. How to Make Mayonnaise Roasted Potatoes

Initially, the idea of roasting spuds in mayo seemed wacky to me. Sure, mayo is great in potato or egg salad, and I love it on sandwiches. But potatoes? I thought the whole idea sounded strange.

That is, until I watched chef and cookbook author Eitan Bernath’s TikTok video that shows how this simple addition makes all the difference.

First, he puts a pound of washed baby potatoes in a bowl. Then he adds one cup of mayo, one teaspoon of garlic powder, one teaspoon of onion powder, one teaspoon of paprika, and a generous pinch of salt and pepper. He then sprinkles in a quarter cup of roughly chopped flat leaf parsley and mixes everything together.

Once the potatoes are completely coated in the flavored mayo, he places them on a baking sheet and roasts them at 425 degrees Fahrenheit for 20 to 25 minutes. Be sure to line the tray with parchment paper to avoid any sticking. The roasted potatoes were ready to serve once they were golden brown and crisp. Naturally, I had to try this recipe out myself. I used a half pound of baby potatoes, which meant adjusting the measurements, but that didn’t seem to make a difference. My potatoes still ended up super delicious! The mayo allowed the spices to stick to the surface of the potatoes, so the oniony, garlicky flavor really shined through. They were crunchy on the outside and fluffy on the inside — perfect! This might just become my go-to for when my roasted spuds need an upgrade.

Aside from roasted potatoes, there are plenty of other ways to use mayonnaise to take everyday dishes to the next level. From grilled cheese to chocolate cake, you should have no troubles using up that jar of mayo in your pantry!
